Chunky Mango Dal
Spices used:
Red chilies 3
Mustard seeds 1 tsp
Cumins seeds 1 tsp
Turmeric 1/2 tsp
Kashmiri chili powder 3 tsps
Coriander powder 2 tsps
Other ingredients:
Onion chopped 1/2 cup
Garlic chopped 3 cloves
Curry leaves 6
Toor daal cooked 4 cups
Raw mango chunks 3 cups
Spinach chopped 2 cups
Salt as per your taste
Water 2 cups
Coriander leaves 1/4 cup
Process:
Step 1: Cook Toor dal
Cook Toor dal with water until it’s soft on a stove or in a pressure cooker.
Step 2: Make Tadka
In another pan, add oil and then add mustard seeds, cumin seeds, whole red chilies to make tadka (the Indian tempering).
Step 3: Add Garlic, Onion, Mango
Once the seeds splutter, add garlic and cook it until it is golden brown. Then add onion and curry leaves and roast until the onion is translucent. Add, turmeric powder and raw mango chunks to the pan. Sprinkle some salt and stir everything together and cover the dish with a lid. Cook for five minutes.
Step 4: Add Dal and spices
Add the cooked dal and water to the dish. Let it come to boil and then add Spinach, Kashmiri chili powder, coriander powder. Let it come to a boil and then cook for another ten minutes on a low flame. Taste the dal and add more salt if needed.
Step 5: Garnish and Serve
The dal is ready. Garnish it with coriander leaves and serve it with rice or naan or a bread of your choice!
