Keema (minced meat) with spices
Whole Spices:
Green Cardamom pods- 5
Cloves - 6
Cinnamon Stick - 1
Bay Leaves - 2
Powdered spices for marination:
Turmeric powder - ¼ tsp
Chilli powder - 1 tsp (Substitute: Kashmiri chili powder/cayenne pepper/Paprika (for non spicy version)
Coriander powder - 1 ½ tsp
Cumin powder - ½ tsp
Spicytude Garam Masala - ¾ tsp
Other ingredients:
Oil - 2 Tablespoons
Onion sliced - ½ cup
Ginger paste - 1 tsp
Garlic paste - 1 tsp
Cilantro - ½ cup
Green Chillies Slit - 3
Salt as per your taste
Keema (Ground protein of your choice - Chicken/Turkey/Lamb/ Beef) - 1lb
Peas - 1 cup
Lime Juice - 1 tsp
Process:
Step 1: Marinate Keema (Ground meat - Chicken/Turkey/Lamb/ Beef)
Add powdered spices, ginger paste, garlic paste and salt to Keema and marinate for an hour.
Step 2: Sauté spices
Add 2 tablespoons of oil to a heated pan (thick pan or skillet) and add Cardamom pods, Cloves, Cinnamon stick and Bay Leaves (all the whole spices). Wait for 30 seconds or less for the spices to release their flavor into the oil. Add onions and sauté them until they are soft and translucent.
Step 3: Add Keema (Lamb or Beef or any other protein of your choice) and other ingredients
Add Green Chillies and cook for a minute. Add Keema and stir everything together. Cook on medium flame for ten minutes with an occasional stir. Add peas, stir everything together and lower the flame and cook for another ten minutes.
Step 4: Garnish and serve
Add cilantro and cook for another minute. Add lemon juice, taste the dish and adjust the salt. Serve it with rice, Naan, Pita or on Tacos.
P.S: Please do not consume whole spices, green chillies and curry leaves as they are too strong in flavor. Separate/ discard them before serving.
