Pepper Chicken
Spices used:
Whole spices:
Cardamom pods - 5
Cinnamon stick - 1
Cloves - 5
Ground spices:
Turmeric powder - 1/2 tsp
Coriander powder - 1 tsp
Black pepper powder - 2 tsps
Spicytude Garam Masala - 1 tsp
Other Ingredients:
Chicken cut into cubes - 1 lb.
Curry leaves chopped - 10
Coriander leaves chopped - 1/2 cup
Mint leaves chopped - 1/2 cup
Green chillies chopped - 2
Ginger paste - 1 tsp
Garlic Paste - 1 tsp
Dry coconut finely ground - 2 tsps
Salt as per your taste
Olive oil -2 table spoons
Process:
Step 1: Marinate the chicken
Marinate the chicken with, curry leaves, mint leaves, coriander leaves, ginger paste, garlic paste, green chillies, turmeric, garam masala and salt. Mix everything thoroughly and refrigerate it for a minimum half hour or overnight.
Step 2: Cook the chicken
Add oil to a heated pan and then add whole spices. After 15 seconds add marinated chicken to the oil and cook on a medium flame. Keep stirring it occasionally. The water from the chicken comes out and starts evaporating.
Once most of the water evaporates and the sauce gets thickened, add black pepper powder, coriander powder and coconut powder and stir it for another five minutes on a low flame. The chicken is ready to serve.
