Green Chicken Sauté
6 to 8 Servings
What You Need:
- 2 to 2.5 lbs boneless chicken thighs cut into 1 inch pieces
- ¾ tsp of Spicytude Garam Masala
- ½ tsp of turmeric powder
- 1 tsp of paprika or red chili powder
- 1 cup of chopped fresh mint leaves
- 1 cup of chopped fresh cilantro
- 2 serrano peppers (or any green chillies)
- 1/4 cup of garlic cloves
- 1/4 cup of chopped ginger
- 1/2 cup of greek yogurt (or plain yogurt)
- 1 tsp of salt to taste
- 2 tbsp of olive oil or any cooking oil you prefer
- 1 cup of finely chopped onion

How To Proceed:
Step 1: Blend
Blend cilantro, mint, serrano peppers, ginger, garlic and yogurt into a green paste.
Step 2: Marinate the chicken
Wash chicken.
Mix together the green paste, turmeric, paprika, salt and Spicytude Garam Masala. Pour marinade over the chicken, mix thoroughly and let marinate for at least an hour or overnight in the fridge if possible.
Step 3: Cook
Heat a pan over medium flame.
When hot, add two tablespoons of olive oil. Add chopped onion to the pan and sauté until onions are golden brown. Next, add marinated chicken and sauté for 20 to 25 minutes on medium heat until the water evaporates and the chicken is cooked. Serve this delicious spicy chicken with rice, bread or a pita wrap!

Spicy Lamb Burgers
4 to 6 Servings
What You Need:
- ½ tsp of Spicytude garam masala
- 1 tsp of paprika
- 1 lb. of ground lamb
- ½ tsp of salt to taste
- 1 diced serrano pepper
- 1 cup of chopped fresh mint
- ½ cup of diced red onion
- ½ cup of chopped spring onion
- 1 tsp of lime juice

How To Proceed:
Step 1:
Set the oven to 380 degrees F
Step 2:
In a large bowl, mix together the Spicytude garam masala, salt, paprika, serrano pepper, red onion, mint, spring onion and lime juice. Add the ground lamb and mix everything together thoroughly. Make burgers.
Step 3:
Bake the burgers in the oven for 20 or 25 minutes in a preheated oven.
Serve the lamb burgers on brioche burger buns (or any other burger buns) with mayonnaise, cheese and vegetables of your choice.

White Bean Stew
4 to 6 Servings
What You Need:
- ½ tsp of Spicytude Garam Masala (per 1 lb. of white beans )
- 1 tsp of paprika
- 2 tbsp of olive oil or any other cooking oil
- 1 cup of finely chopped onion
- 1 fresh/dry bay leaf
- 2 cloves of finely chopped garlic
- ½ tsp of salt to taste
- 1 lb of boiled or canned white beans
- 1 cup of diced tomatoes
- 1 cup of chopped cilantro
- 2 cups of vegetable broth

How To Proceed:
Step 1: Saute onion with spices
Heat a pan over medium flame. When hot, add two tablespoons of olive oil. Add chopped onion, bayleaf, garlic to the pan and sauté until onions are golden brown.
Step 2: Cook white beans and tomatoes
Next, add the white beans, salt, paprika, Spicytude Garam Masala, tomatoes and cover the dish with a lid. Stir occasionally and let cook for six to eight minutes on a medium flame. Add broth, cilantro and stir everything together. Let simmer for 4 to 5 minutes.
Serve this stew as a complete meal or with a side of a bread, rice or any side dish of your choice.

Chickpea Curry (Cholay)
4 to 6 Servings
What You Need:
- 1 lb of boiled or canned chickpeas
- 1 cup of diced tomatoes
- ½ tsp of Spicytude Garam Masala
- 1 tsp of kashmiri chili powder or any red chili powder
- 1 cinnamon stick
- 2 bay leaves (dry or fresh)
- 2 tablespoons of olive oil or any other cooking oil
- 1 cup of finely chopped onion
- ½ tsp of salt to taste

How To Proceed:
Step 1: Sauté onion and spices
Heat a pan over medium flame. When hot, add two tablespoons of olive oil. Add chopped onion,cinnamon, bay leaves, kashmiri chili powder, Spicytude's Garam Masala and saute until the onion is golden brown.
Step 2: Cook
Next, add the chickpeas, tomato, salt and stir all the ingredients together. Cover the pan with a lid and let cook for ten minutes. Serve this chickpea curry with rice or bread.
