Chicken Tikka Masala

Ingredients
- 2 to 2.5 lb of chicken thighs washed and cut into 2 inch pieces
- 4 tbsp of any cooking oil
- Spicytude Tikka Masala Spice Mix (2 sachets)
- Sachet 1 - Spice Mix to marinate protein
- Sachet 2 - Spice Mix to cook onions and tomatoes
- ½ cup of plain yogurt
- 2 tsp of garlic minced or crushed or paste
- 2 tsp of ginger minced or crushed or paste
- 1 cup of heavy cream
- 2 tsp of sugar
- 2 cups of finely chopped onion
- 3 cups of diced tomatoes
- 1 cup of chopped cilantro to garnish
Pots and Pans
- 1 big pan to cook.
Step 1: Marinate and saute chicken
- Wash chicken and marinate with yogurt, ginger paste, garlic paste, and Sachet 1 (Spice Kit to marinate protein).
- Marinate for at least an hour or overnight in the fridge if possible.
- Sauté marinated chicken in batches in a heated pan with two tablespoons of oil.
- Cook each side for three minutes. Set aside.
Step 2: Cook onions, tomatoes, and chicken
- Sauté onions in the same pan until golden brown.
- Add tomatoes, sugar, and Sachet 2 (Spice Kit to flavor the onions and tomatoes).
- Blend the cooked mixture into a smooth paste and return it to the pan.
- Add the sautéed chicken. Cook for ten minutes on medium flame, then reduce the flame to low.
- Add cream, mix well, and cook for an additional three minutes.
- Turn off the stove, garnish with cilantro, and serve with rice, naan, or your choice of bread.
