Chicken Tikka Masala

Ingredients
- Boneless Chicken Thighs: 2 to 2.5 lbs
- Spicytude Tikka Masala Spice Kit: 2 Sachets
- Cooking Oil: 4 tbsp
- Plain Yogurt: ½ cup
- Minced/Crushed/Paste Garlic: 2 tsp
- Minced/Crushed/Paste Ginger: 2 tsp
- Heavy Cream: 1 cup
- Finely Chopped Onion: 2 cups
- Diced Tomatoes: 3 cups
- Sugar: 2 tsp
- Chopped Cilantro for Garnish: 1 cup
Equipment
- 1 Big Pan
Step 1: Marinate and Saute Chicken
- Wash chicken and marinate with yogurt, ginger paste, garlic paste, and Sachet 1 (Spice Kit to marinate protein).
- Marinate for at least an hour or overnight in the fridge if possible.
- Sauté marinated chicken in batches in a heated pan with two tablespoons of oil.
- Cook each side for three minutes. Set aside.
Step 2: Cook Onion, Tomatoes, and Chicken
- Sauté onions in the same pan until golden brown.
- Add tomatoes, sugar, and Sachet 2 (Spice Kit to flavor the onion and tomatoes).
- Blend the cooked mixture into a smooth paste and return it to the pan.
- Add the sautéed chicken. Cook for ten minutes on medium flame, then reduce the flame to low.
- Add cream, mix well, and cook for an additional three minutes.
- Turn off the stove, garnish with cilantro, and serve with rice, naan, or your choice of bread.
