Chicken Tikka Masala

Ingredients

  • 2 to 2.5 lb of chicken thighs washed and cut into 2 inch pieces
  • 4 tbsp of any cooking oil
  • Spicytude Tikka Masala Spice Mix (2 sachets)
    1. Sachet 1 - Spice Mix to marinate protein
    2. Sachet 2 - Spice Mix to cook onions and tomatoes
  • ½ cup of plain yogurt
  • 2 tsp of garlic minced or crushed or paste
  • 2 tsp of ginger minced or crushed or paste
  • 1 cup of heavy cream
  • 2 tsp of sugar
  • 2 cups of finely chopped onion
  • 3 cups of diced tomatoes
  • 1 cup of chopped cilantro to garnish

Pots and Pans

  • 1 big pan to cook.

Step 1: Marinate and saute chicken

  1. Wash chicken and marinate with yogurt, ginger paste, garlic paste, and Sachet 1 (Spice Kit to marinate protein).
  2. Marinate for at least an hour or overnight in the fridge if possible.
  3. Sauté marinated chicken in batches in a heated pan with two tablespoons of oil.
  4. Cook each side for three minutes. Set aside.

Step 2: Cook onions, tomatoes, and chicken

  1. Sauté onions in the same pan until golden brown.
  2. Add tomatoes, sugar, and Sachet 2 (Spice Kit to flavor the onions and tomatoes).
  3. Blend the cooked mixture into a smooth paste and return it to the pan.
  4. Add the sautéed chicken. Cook for ten minutes on medium flame, then reduce the flame to low.
  5. Add cream, mix well, and cook for an additional three minutes.
  6. Turn off the stove, garnish with cilantro, and serve with rice, naan, or your choice of bread.
