Chickpea Curry (Cholay)

Ingredients
- 1 lb of boiled or canned chickpeas
- 1 cup of diced tomatoes
- 1/2 tsp of Spicytude Garam Masala
- 1 tsp of kashmiri chili powder or any red chili powder
- 1 cinnamon stick
- 2 bay leaves (dry or fresh)
- 2 tablespoons of olive oil or any other cooking oil
- 1 cup of finely chopped onion
- 1/2 tsp of salt to taste
Step 1: Saute Onion and spices
- Heat a pan over medium flame.
- When hot, add two tablespoons of olive oil.
- Add chopped onion,cinnamon, bay leaves, kashmiri chili powder, Spicytude's Garam Masala and saute until the onion is golden brown.
Step 2: Cook
- Next, add the chickpeas, tomato, salt and stir all the ingredients together. Cover the pan with a lid and let cook for ten minutes. Serve this chickpea curry with rice or bread
