Pork Vindaloo
6 to 8 Servings
Ingredients
- 2 to 2.5 lbs boneless pork, washed and cut into 2-inch pieces
- Spicytude Vindaloo Spice Kit
- 3 tbsp red wine vinegar or apple cider vinegar
- 3 to 4 tbsp water
- 2 tbsp cooking oil
- 2 tsp minced, crushed, or paste garlic
- 2 tsp minced, crushed, or paste ginger
- 1 cup finely chopped onion
- 2 cups diced tomatoes
- 2 tsp sugar
Step 1. Fry onion
- Sauté the chopped onions in 2 tbsp of oil over medium heat until browned. Then, add the tomatoes and cook until they soften.
Step 2. Blend the onion and tomatoes with other ingredients
- Add the cooked onion and tomato mixture, along with ginger, garlic, spice mix, vinegar, salt, sugar, and water, to a blender. Blend everything into a smooth paste.
Step 3. Marinate Pork
- Add the paste to the pork and mix well. Allow it to marinate for at least 30 minutes to 1 hour or you can refrigerate it and let it marinate overnight.
Step 4. Sauté Pork
- Add the marinated pork to the same pan. Cook for 5 to 6 minutes until the pork is heated through and turns white on all sides. Cover the pan, lower the heat, and let it cook for an additional 20 to 25 minutes, stirring occasionally. Turn off the heat once the oil rises to the top and the pork is fully cooked.
- Serve with your choice of rice, naan, or any other bread.
