White Bean Stew

White Bean Stew

This flavorful, vegan, heart healthy white bean stew can be your delicious lunch or dinner.

Spices Used:

1/2  teaspoon of Spicytude Garam Masala (for 1 lb. of white beans )

1/2  teaspoon of Mustard seeds 

1/2  teaspoon of Cumin Seeds

1/2 teaspoon of Turmeric

1 teaspoon of Paprika

Other Ingredients:

2 tablespoons of Olive oil or any other cooking oil

1 cup of chopped onion

1 fresh/dry bay leaf

1/2 teaspoon of salt or as per your taste

1lb. of boiled or canned white beans

1 cup of diced tomatoes

1 cup of chopped cilantro

2 cups of water or vegetable broth of your choice

Process: 

Step 1: Fry onion with spices

Add 2 tablespoons of olive oil to a heated pan. Add mustard seeds, cumin seeds and let them splutter. Add chopped onions, bayleaf, turmeric, chopped garlic, Spicytude Garam Masala. Stir occasionally and fry until the onions are translucent.

Step 2: Cook white beans and tomatoes

Add white beans, salt, Paprika, diced tomatoes and cover the dish with a lid. Stir occasionally and let it cook for six to eight minutes on a medium low flame. 

Step 3: Boil the stew

Add water, cilantro and stir everything together. Let it boil for 4 to 5 minutes.  Serve this stew as a complete meal or with a side of a bread, rice or any side dish of your choice.
